This savory treat boasts the best homemade AIP Biscuits, and a beautiful, creamy broth-based meat gravy!
This satisfying meal is Gluten-free, Paleo and for some, Whole30, in addition to being AIP. The recipe can also be made coconut-free, depending on your dietary needs.
Make as a main dish for breakfast, brunch, lunch or dinner.
Serve to guests
Because this recipe makes 8 to 9 biscuits, you can even serve this recipe on a holiday, as you’ll have enough biscuits to serve 8 to 9 people; just double the gravy recipe!
What are some things that make AIP Biscuits and Gravy the best!
- Make this recipe with your ground meat of choice! Yes, you can make this recipe with traditional bulk pork sausage. But we all know there are healthier meats. I love making it with ground beef even. Or use ground turkey or chicken. Or perhaps you have wild or other meat in the freezer: Sure, use ground venison, buffalo etc. (Very convenient, thrifty and versatile!)
- This biscuits recipe is truly the best AIP Biscuit. It’s made with cassava flour. Please be sure to use Otto’s (see the 15% off discount with this link) for the best results. Do not use brands like Anthony’s, as they make their flour from larger roots, and this creates a starchier product that does not work in baked goods; (it behaves more like tapioca flour).
- This AIP gravy recipe can be made coconut-free. If you LOVE extra creamy AIP gravy, great!! Otherwise, this recipe can be made with all broth, and it’s still wonderful.

AIP Biscuits

Make this recipe first. While the biscuits bake (25 minutes), you’ll make the gravy.
The entire recipe comes together faster and easier than you’d think!
Meat ingredients
First, you’ll cook up the meat in a sauté pan. You’ll use:
- olive oil, or avocado oil (omit for higher fat meats like beef or pork)
- ground meat of choice — including beef, turkey, chicken, pork, buffalo or wild game
- sea salt
- poultry herbs
- dried ginger powder
- onion powder
Gravy Ingredients
Next, the saucy ingredients are:
- broth — Homemade Meat Stock, Bone Broth, or store bought Bone Broth (This powdered sustainable product works well mixed with water, for convenience, and is AIP compliant. - coconut milk, or more broth if you need to avoid coconut milk
- arrowroot, or tapioca flour (if needed), see Notes’ comments below
- coconut aminos
- sea salt
How to make AIP Biscuits and Gravy
- If using a higher fat meat like beef or pork, do not using any cooking oil. Otherwise, add oil to pan. Add meat, herbs, spices and sea salt to hot pan, and cook over medium to medium-high heat until no longer pink, about 8 minutes, breaking up meat with spatula into small pieces as it cooks.
- While the meat cooks, combine in small bowl or measuring cup with pour spout the creamy gravy ingredients: coconut milk (or 1/2 cup broth if you can’t eat coconut milk; recommended if you can have it), coconut aminos, arrowroot and sea salt. Set aside.
- Add broth to meat pan, and heat, then simmer about 3 minutes.
- Give arrowroot mixture a good stir so it’s fully mixed. Pour it into the broth and meat mixture in the pan. Stir it in until it simmers and thickens (almost immediately). If using arrowroot, remove it from the heat as soon as it thickens. If using tapioca, simmer 3 minutes.
- Serve immediately. Slice biscuits in half. Plate, and top with gravy. Garnish with fresh herbs like chives or parsley, or fried herbs like sage or rosemary.

Meat Ingredients
- 1 Tablespoon olive oil or avocado oil (omit for higher fat meats like beef or pork)
- ¾ lb ground meat of choice including: turkey, chicken, pork, beef, buffalo or wild game
- ¾ teaspoon sea salt
- 1 teaspoon bulk poultry herbs or use: ½ teaspoon dried sage + ½ teaspoon dried thyme
- 1 teaspoon ginger powder
- ½ teaspoon onion powder
Saucy Gravy Ingredients
- 2 cups broth: Homemade Meat Stock, Bone Broth, or store bought Bone Broth (This powdered sustainable product works well mixed with water, for convenience, and is AIP compliant. - ½ cup coconut milk , or more broth instead if you need to avoid coconut milk
- 3 Tablespoons arrowroot or tapioca flour (if needed), see Notes' comments below
- 1 Tablespoon coconut aminos
- ½ teaspoon sea salt

- If you want to make 8 biscuits, form the dough into a rectangle (you'll see photos in the recipe when you click through). For 9 biscuits, form the dough into a square.
Gravy (While the biscuits bake, make the gravy.)
- If using a higher fat meat like beef or pork, do not using any cooking oil. Otherwise, add 1 Tablespoon olive oil or avocado oil to pan. Arrowroot is the better choice, but tapioca flour works fine. The version with beef and no coconut milk is quite good.

I made this, and it was so good!! It’s good comfort food, and reminds me of southern cooking. A little elderly lady I once knew ate gravy out of a bowl on a regular basis, lol. I used beef for the meat and made chickpea flour biscuits, since they’re probably a little lower in carbs. The creamy gravy makes it such a treat. Thank you for another recipe for our repertoire!
