Here's a little bit of my story ...
6 Years on GAPS
What started with nagging — and in some cases dangerous — symptoms, evolved into me choosing our first wellness diet: GAPS (which stands for Gut and Psychology Syndrome, developed by Dr. Natasha Campbell-McBride). I spent 6 years on the GAPS diet with our three kids.
Our Café
Just prior to this time, my husband and I opened our first café — a kefir-based and dairy-free frozen yogurt shop.
As my health continued to present new challenges, we added bone broth and healing soups to our menu. I stepped up my game and learned everything I could about making great soup.
We opened second and third locations of our café. Doctors sent their patients to us to buy bone broth, even as I continued to minister to my own health needs.
Opening our third location gave rise to a wonderful stage in my life when I made many gallons of bone broth each day and fine-tuned our wonderful soups.

AIP and Paleo
Eventually our family phased off of the GAPS diet. We added in healthy starches and phased into an anti-inflammatory wellness AIP/Paleo diet — egg-free for my youngest son and dairy-free for my daughter.
The majority of my clients were (and continue to be) doing AIP, Paleo or GAPS diets — or variations of them.
Keto
I also spent about a year doing intermittent fasting with a low-carb diet. I added Keto recipes to my blog and started consulting with Keto clients to help them reach their health goals.
From Day One of our café, we offered Keto ice creams. But I began to focus on Keto soups and stews — easy savory meals to nourish and satisfy — instead of on sweets.

We finally sold our business, to reduce stress — and to center our lives more around family and less around a brick-and-mortar business.
VAD
I now follow a temporary diet called the VAD, or the Vitamin A Detox diet, which has resolved my remaining symptoms and continues to help me find deep healing. With the VAD diet, I have overcome endometriosis, MCAS (mast cell activation syndrome) and histamine over-reactivity. (I was exposed to extreme amounts of dioxins in the summer of 2018, which caused these latest health upsets.)
