Mojito makes one of the best ice cream, sorbet or popsicle flavors!: citrusy, with mint, and the refreshing, surprising flavor of cucumber! Mojito Popsicles are the perfect 4-ingredient summer treat! Especially on a hot afternoon or evening, relax and spread a fun atmosphere with lime, spearmint and cucumber popsicles!
These treats are Paleo, AIP, VAD, Vegan, Gluten-free, Keto and GAPS — and great for most real food, clean eating diets. I’ve made them non-alcoholic (the original Mojito concept is a cocktail) so they’re great for everyone, including kids, and they’re healthier that way, too. This combination of ingredients is too good to reserve for a cocktail.
Ingredients in Mojito Popsicles
In this recipe I use spearmint essential oil (find it here) to deliver the best mint flavor — absolutely perfect.
Essential oils are great for exquisite flavor, and they’re easy to keep on hand. Just the tiniest bit is used.
And then, as seen in the photos, I do love to use fresh mint leaves to garnish the popsicles before freezing. A small amount of fresh mint may also be blended in for a greener popsicle and fresh mint flavor.
Additional ingredients are:
- water
- cucumber
- honey, or agave nectar for Vegan/if preferred; (for Keto, use liquid allulose)
- lime, or lemon
This 4-ingredient + water recipe comes together really fast!
How to make Mojito Popsicles
- Simply blend all the ingredients for 30 seconds!
- Pour into popsicle molds, and freeze for a minimum of 3 hours, or overnight.
Optionally, garnish before freezing with any of the fresh ingredients.

- Place all ingredients into blender, and puree until smooth, about 30 seconds.
- Pour into popsicle molds, securing the bases and sticks. Add thin slices of lemon, lime, cucumber and/or fresh mint leaves if you wish.
- Freeze at least 3 to 6 hours, until fully frozen. Serve.
