Mojito Popsicles (Paleo, Vegan, AIP, non-alcoholic)

Mojito Popsicles are the perfect 4-ingredient summer treat! Especially on a hot afternoon or evening, relax and spread a fun atmosphere with lime, spearmint and cucumber popsicles!

Ingredients

  • 1-1/2 cups filtered water
  • 1/2 to 2/3 cup cucumber diced to measure
  • 1/4 cup raw honey or agave for Vegan (or if preferred); allulose for Keto
  • 1/2 lime or lemon, juiced -- about 1-½ Tablespoons
  • 1 to 2 drops spearmint essential oil

Instructions

  • Place all ingredients into blender, and puree until smooth, about 30 seconds.
  • Pour into popsicle molds, securing the bases and sticks. Add thin slices of lemon, lime, cucumber and/or fresh mint leaves if you wish.
  • Freeze at least 3 to 6 hours, until fully frozen. Serve.

Notes

*This is my favorite spearmint essential oil. It's very potent, so just a dash will do it. A lovely accent!
