Mojito Popsicles (Paleo, Vegan, AIP, non-alcoholic)
Mojito Popsicles are the perfect 4-ingredient summer treat! Especially on a hot afternoon or evening, relax and spread a fun atmosphere with lime, spearmint and cucumber popsicles!

1-1/2 cups filtered water 1/2 to 2/3 cup cucumber diced to measure 1/4 cup raw honey or agave for Vegan (or if preferred); allulose for Keto 1/2 lime or lemon, juiced -- about 1-½ Tablespoons 1 to 2 drops spearmint essential oil
Place all ingredients into blender, and puree until smooth, about 30 seconds.
Pour into popsicle molds, securing the bases and sticks. Add thin slices of lemon, lime, cucumber and/or fresh mint leaves if you wish.
Freeze at least 3 to 6 hours, until fully frozen. Serve.
