This recipe was recently updated. It used to be a bit different, and I wanted to improve it.
I feel like I got lucky (or blessed) with how this version just landed in my head. I made the dressing as I newly envisioned it, tasted the tossed salad, and the pleasure that exploded in my mouth told me I had just eaten the best carrot salad ever.
It was fun then to see that the rest of my family agreed. Without being asked, so much excitement and so many comments about “this carrot salad” …

My 20 year old, who lives on our property, but in our refurbished barn, came in late one night to look for snacks and ate up all the leftovers. The next morning, I didn’t know where they’d gone. A couple days later, he wandered in again, and somewhat sheepishly said, “I don’t know if I was supposed to eat it, but that carrot salad was REALLY good”. This is my kid who is so HUNGRY all the time from all his athletic workouts that he sometimes π forgets to notice his quality of meals or thank the cook.

Ingredients in Best Carrot-Raisin Salad
Carrots, Raisins, Pineapple, Ginger, Lemon and Honey … π
I use the traditional pineapple and raisins that we often see in carrot salads, with which you just can’t go wrong. Sweet, earthy, chewy, perfect to accompany freshly grated juicy carrots.
A couple other ingredients go into making this dressing healthy and lovely: olive oil and sea salt. That’s it!
Garnish
Optional garnishes include fresh mint or fresh tarragon — both of which go great with savory recipes, but also compliment sweet recipes.
How to make Best Carrot-Raisin Salad
Soo easy:
- Grate the carrots and place in salad bowl. Add fresh chopped pineapple and raisins.
- Whisk together the dressing ingredients in a small bowl or Pyrex style measuring cup.
- Pour dressing over carrots and fruit.
- Stir to mix well. Garnish with optional fresh mint or tarragon leaves.
Serve, or refrigerate until you’re ready to serve. It’s also good the next day.
Best Carrot-Raisin Salad (Paleo, AIP, Vegan, Gluten-free)
Equipment
- small bowl for mixing dressing
- salad bowl
Ingredients
- 1 pound carrots grated, (use white carrots for VAD or if preferred)
- β cup pineapple fresh and chopped into smaller than bite-size pieces
- ΒΌ cup raisins chopped roughly
Honey-Lemon-Ginger Dressing
Instructions
- Place grated carrots in large bowl. Add pineapple and raisins on top. Set aside.
- In 2-cup Pyrex with pour spout or small bowl, whisk together salad dressing ingredients: oil, ginger root, fresh lemon juice, honey and sea salt.
- Pour dressing over carrots, pineapple and raisins. Toss to coat thoroughly. Add optional fresh herb, and toss again briefly.
- Serve, or refrigerate until needed. Excellent when served immediately, but it's also fine to serve after several hours or the next day.
