This AIP Paleo Salsa Round-Up shares 7 of the best Paleo AIP salsas. Each one is nightshade-free, and most use fruits creatively in place of tomatoes and peppers. These salsas are ones we’ve loved on tacos, Mexican salads and in a myriad of ways to add fresh bold tastes to grilled meats, summer BBQs, homemade tortillas and more.

AIP PALEO SALSA ROUND-UP (NIGHTSHADE-FREE)
1. Strawberry Pico de Gallo
This fruit-based Strawberry Pico de Gallo recipe goes everywhere a traditional pico de gallo would go, and tastes quite similar actually! Lovely on tacos. (For “corn” tortillas, use these awesome AIP Plantain Taco Shells.)
2. AIP Verde Salsa
You’ll love to spoon AIP Verde Salsa over tacos, or over a big main dish Mexican salad. Full of bold flavors and a comforting texture, this recipe is also lower in sulfur, which can aggravate some people’s detox process, so extra gentle — yet spicy still, and it tastes similar to the real thing. When I first made this recipe for my family, they just loved it, and didn’t even know it was healthier than the tomatillo and jalapeño traditional recipe.
3. Nightshade-free Salsa Verde
Similar to the above recipe, but a different version, Nightshade-free Salsa Verde also uses avocado, garlic and onion.
4. Ginger-Lime Salsa with Kiwi and Jicama
Juicy, tart, spicy, sweet and crunchy, this Ginger-Lime Salsa with Kiwi and Jicama is fabulous on tacos, with grilled meats and also lovely to eat by the spoonful.
5. Watermelon Salsa
Make one sub in this Paleo recipe so it’s AIP compliant: Replace the jalapeño with two tablespoons freshly grated ginger root (and do not use the optional pepper). This 5 ingredient salsa is beautiful; it looks just like real pico de gallo, but it’s even fresher tasting, thanks to watermelon.
6. Cucumber Mango AIP Salsa
This beautiful chunky salsa is sure to please with most people’s favorite: mango, plus red onion and refreshing cucumber.
7. Peach-Ginger Salsa with Cilantro
This Peach Salsa can also be made with nectarines. It’s honestly better than any tomato-based pico de gallo recipe: sooo good! I mean, what can beat peaches, right?
