This Hot Carob Drink Recipe is so deliciously comforting: dark, frothy, rich, hot and creamy. It’s a great replacement for hot chocolate, that’s healthier, gentler and with better nutrients. No milk is used in this recipe, and it even includes a recipe for Hot Carob Drink Mix: a powder you can make in bulk, to just mix up your drink faster each time you want it. Water is used in this recipe, instead of milk. The following ingredients get added and blended in to create that creamy cup:
- carob powder — roasted/toasted (not raw)
- tiger nut butter — a great ingredient and fridge staple! Smooth and delicious. (For AIP and if preferred.) — Or any smooth nut butter if preferred (for non-AIP); for non-Paleo, it also works to use peanut butter.
- maple syrup
- sea salt — Or Potassium Salt for more of the mineral balance we need, which is what I use.
- gelatin — This ingredient is not optional. It helps to create the right mouthfeel and foam.
How to make Hot Carob Drink recipe
Unlike most hot carob recipes, this one uses water, not milk.
Why did I do that? Honestly, finding the right milk for a healthy diet is really really hard. Not everyone can drink coconut milk. Plus, we don’t always want that coconut flavor. Added to that, coconut milk is really high in copper, which almost all Americans should reduce in their diet (so we try to save coconut milk for special recipes, like these amazing soup or curry recipes, and not have it too often).
The great news is that most diets do have a nut, seed or tiger nut butter that’s included that works wonderfully for this recipe and is gentle for the body — plus convenient.
This Hot Carob Drink recipe uses water + plus nut or tiger nut butter to create “milk”, and the outcome is lovely.
Blender method
- Combine in high speed blender: water, sweetener, nut or tiger nut butter, pinch of sea salt, gelatin sprinkled over the surface, and carob dumped on top.
- Blend on medium high speed about 30 seconds until creamy and frothy.
- Pour into saucepan, and heat until very steamy hot, stirring occasionally, but do not simmer.
- Serve. Or for a frothier finish, use handheld milk frother to add fine foam on top.
Milk frother method
You may, alternately, decide to get a milk frother for just this recipe.
Using a milk frother is newer for me, but it’s an awesome luxury. - Add to milk frother insert: water, sweetener, nut or tiger nut butter and pinch of salt.
- Sprinkle gelatin over the surface, then add carob on the top. Attach lid.
- Press Start button, to allow heating and frothing process, and serve!

- 1 cup water
- 1 Tablespoon tiger nut butter (for AIP and if preferred), or any smooth nut butter if preferred (for non-AIP)
- 2 teaspoons maple syrup
- pinch sea salt
- 1 teaspoon gelatin
- 1 Tablespoon carob roasted/toasted (not raw), just slightly heaping

- See Notes section below for Powdered Mix recipe. Then here's how to make the drink with your Mix: Add to blender or milk frother: 1 cup water and 1 Tablespoon tiger nut butter (just a tiny bit slightly heaping).
- Add: 1 Tablespoon + 1 heaping teaspoon mix per serving.Blend for 30 seconds in blender, or for full cycle of milk frother.If you used the blender option, pour contents into saucepan, and heat until very hot, but not yet simmering, stirring occasionally. If more foam is desired, use hand frother.Serve.

Bulk Powdered Hot Carob Drink Mix
This recipe makes 12 servings.- In medium-size mixing bowl, use a whisk to combine dry ingredients well. You may wish to sift the powders if they're clumpy. Then transfer to storage container:
- ¾ cup carob
- ¾ cup maple sugar (or coconut sugar) -- Note that this does not need to be packed down much to measure, and it is less sweet than maple syrup, so more is needed to achieve the same flavor.
