Mojito Popsicles~ for grown-ups! {Alcoholic & Paleo}

Mojito is one of the best ice cream flavors. We serve it at our cafe, a dairy-free ice “cream”, and it’s well loved. We love the addition of cucumber, so I’ve added it here, too. These popsicles are the perfect grown-up celebration of summer.

For those who enjoy alcohol, like my hubby, it’s super fun and restful in the afternoon heat of summer to present adult popsicles as an aperitif of sorts!

In this recipe I use spearmint essential oil, because it’s so good. You could sub in a few leaves of fresh mint, sure! And you can choose which Paleo alcohol you like best. My hubby likes gin best. Tequila and potato vodka are considered the best Paleo choices.

To read up on Paleo drinking here are two posts that look at health and alcohol: one and two.

Cheers to summer, loves! May these be a fun addition.

  1. Place all ingredients except alcohol into blender, and puree until smooth, about 30 seconds.

  4. Freeze 3-6 hours, until fully frozen. Serve.
Recipe Notes

*This is my favorite spearmint essential oil. It's very potent, so just a dash will do it. A lovely accent!

    What Popsicle molds did you use for these? They look like a good size. So many are way too big.
