Ingredients in Strawberry Breakfast Bars
I think you’ll have most of these ingredients in your pantry and freezer already:
- strawberries — I use frozen, defrosted just long enough so I can slice them. You may also use fresh.
- cassava flour — Only use Otto’s or Bob’s brands. Other brands are made from older cassava roots and will ruin the recipe because they are too stretchy, like tapioca flour.
- coconut flour
- coconut oil, or avocado oil for a slightly moister outcome
- coconut milk — Or other non-dairy compliant milk, like tiger nut.
- coconut sugar — I use more sweetener in this recipe than in some of my AIP recipes, so just be sure to enjoy amidst an active lifestyle and with protein. I like my treats best right before or after a long walk or other gentle workout, so my body uses the sweetener instead of storing it.
- gelatin and collagen — The first is used to replace eggs, and the second is used to create the best texture, so don’t eliminate either.
- baking soda and cream of tartar — for the rise
- sea salt
How to make Paleo AIP Strawberry Breakfast Bars
This recipe is as easy as they come: Combine dry ingredients in a large bowl. Add the wet ingredients, and stir to mix!
How to store leftovers
Strawberry Breakfast Bars are best left at room temperature for the first day or two, sealed. After that, refrigerate or freeze, but you may wish to warm them to room temp before enjoying — because they contain gelatin, which means they’ll firm up when chilled.
Feel free to freeze for up to 3 months.
Paleo AIP Strawberry Breakfast Bars (Gluten-free, Egg-free)
Equipment
- baking pan 9"x9" or 10"x10"
- smaller mixing bowl for wet ingredients
Ingredients
- 1-½ cups cassava flour Only use Otto's or Bob's brands. Other brands are made from older cassava roots and will ruin the recipe because they are too stretchy, like tapioca flour.
- 1 heaping cup strawberries I use frozen, defrosted just long enough so I can slice them. You may also use fresh.
- ¾ cup coconut sugar
- ⅔ cup coconut milk Warmed or room temp, not too lumpy, and not cold. Or other non-dairy compliant milk, like tiger nut.
- ⅔ cup coconut oil melted and cooled slightly
- ¼ cup coconut flour
- ¼ cup collagen <-- This brand is recommended. Use code BEAUTIFUL10 for 10% off your entire order.
- 3 Tablespoons water room temp
- 2 Tablespoons gelatin <-- This brand is recommended; use code BEAUTIFUL10 for 10% off your entire order.
- 1-½ teaspoons cream of tartar
- ¾ teaspoon baking soda sifted
- ½ teaspoon sea salt
Instructions
- Preheat oven to 350℉. Grease a square 9" or 10" pan. If you wish, line the pan with a strip of parchment paper.
- Combine dry ingredients in large bowl: cassava flour, coconut sugar, coconut flour, collagen, gelatin, cream of tartar, baking soda and sea salt. Stir briefly to mix.
- Combine wet ingredients in small bowl (except strawberries): coconut milk, coconut oil and water. Add wet ingredients to dry ingredients. Use a handheld electric mixer to combine well, without over-mixing. Add and mix in strawberries toward the end, reserving about 10 slices for garnish if you'd like. The batter will be thick, (which is necessary for egg-free baked goods).
- Scrape batter into prepared pan, and press on it with spatula or fingers to spread out fully to the edges. (If you wish, garnish the top with reserved strawberry slices pressed into the batter before baking.)
- Bake 25 to 30 minutes, until browned, the edges are raised and crisped, and the center is also raised and cracked in places.
- Allow to cool fully, then slice into 9 even squares, and serve.
