Mojito is one of the best ice cream or sorbet flavors: citrusy, with herbs, and the refreshing, surprising flavor of cucumber. We serve it at our cafe, a dairy-free ice “cream”, and it’s well loved by customers! We love the addition of cucumber, so I’ve added it here, too. These popsicles are the perfect grown-up celebration treat! Especially on a hot afternoon or evening, relax and spread a fun atmosphere with grown-up popsicles! These treats are Paleo and alcoholic, which I discuss a bit below.
For those who enjoy alcohol, like my hubby, it’s super fun and restful during an afternoon or evening gathering to present adult popsicles as an aperitif of sorts! They can also be served as a light dessert.
Fresh Mint or EO …
In this recipe I use spearmint essential oil (find it here) to deliver the best and most amazing mint flavor … because it’s SO good! You can sub in several leaves of fresh mint, if you prefer, especially if you have lots growing in your garden. But essential oils are great for an exquisite flavor, and they’re easy to keep on hand.
Which Alcohols are Paleo
You can choose which Paleo alcohol you like best! My hubby likes gin best. Tequila and potato vodka are considered the best Paleo choices.

Mojito Popsicles~ for grown-ups! {Alcoholic & Paleo}
Ingredients
- 1-ยฝ cups filtered water
- 1/2-โ cup diced cucumber, unpeeled
- ยผ cup tequila, vodka, or gin whiskey is also good, but is not technically Paleo
- ยผ cup raw honey
- 1-2 drops spearmint essential oil*
- juice of ยฝ a lemon or lime
Instructions
- Place all ingredients except alcohol into blender, and puree until smooth, about 30 seconds.
- Add alcohol and blend again briefly, to mix.
- Pour cocktail into popsicle molds, securing the bases and sticks. Add thin slices of lemon, lime or cucumber if you wish, pushing 1 or 2 pieces into puree.
- Freeze 3-6 hours, until fully frozen. Serve.
