Tigernut Butter "Peanut Butter" Dessert Sauce is an amazing peanut buttery sauce that's ridiculously delicious on cakes, ice cream, pancakes, waffles and more, or as a dipping/fondue style sauce for cake or fruit. Paleo, AIP, Vegan.
⅓cupcoconut sugar or maple sugar: Use maple sugar if you want a slightly lighter colored sauce, as pictured; either way, it will be darker than peanut butter because tigernut butter is dark.
3Tablespoonsmilkof choice, to fit your dietary needs (such as coconut milk, tigernut milk, or even more water is okay)
2teaspoonsreal vanilla extractDo not omit this ingredient if you plan to use the sauce on ice cream, as it will help to keep it the right texture when it gets cold.
Instructions
Whisk together your sweetener of choice, water and salt in a small saucepan over high heat. Bring to a boil; boil for one minute.
Remove from heat. Use a whisk or small food processor. (I do whisk this recipe by hand, but it does take a few minutes of whisking; so the food processor makes the recipe faster.) Whisk in the tigernut butter and maple syrup until well blended and smooth. At first, the “nut” butter will kind of “seize up” and be stubborn, but just keep whisking for it to become smooth. Add the milk as you whisk, as needed, to get the right consistency. (I don't like to add it all at once, to get any lumps out first.)
When smooth, whisk in the vanilla extract.
Pour slightly warm sauce over ice cream, cakes, pancakes, waffles and more. Use as a warm fondue dipping sauce for Paleo, AIP, Vegan cakes, fresh pineapple, strawberries, banana, apples etc.
