Roasted "Potato" Salad~ Rutabaga, Celery Root and Black Radish

rutabaga
peeled and cut into 1" cubes
1
large
celery root
peeled and cut into 1" cubes
1
large
black radish
peeled and cut into 1" cubes
1/4
cup
avocado oil
or preferred fat for roasting veggies
1/2
tsp.
sea salt
Instructions
Preheat oven to 400 degrees.
Toss the veggie cubes with the oil and sea salt, to coat.
Spread them evenly on a large cookie sheet and bake for 40 minutes.
Serve hot, warm or at room temperature.
