Ingredients

  • 2 medium-large size tomatoes , diced or chopped small
  • 1 large avocado , diced (or 2 small)
  • 1/3 red onion , diced, about 1/3 cup (or use 1 to 2 purple shallots)
  • 1/2 cup fresh cilantro , minced
  • 1 lime , juiced
  • 1/2 jalapeno , seeds removed and minced, optional
  • 1 clove garlic , minced or crushed, optional

Instructions

  • Combine all ingredients in medium size bowl and stir to mix. Serve, or refrigerate for up to one day.
