Typically salsa verdes are a type of spicy, green saucy salsa in Mexican cuisine. They usually contain ingredients that can be inflammatory: tomatillos and green chili peppers. That salsa verde dates to the Aztec Empire, and is unique from medieval European green sauces that always contained parsley.
Ours is an updated version of the Latin recipe. Instead of using tomatillos and peppers, it uses cilantro, kiwi and cucumbers. And the spice comes from finely grated fresh ginger root.
The appearance is similar, and the flavor is, too!
My family loved this recipe on tacos, and it’s thankfully easy to make AIP Taco Shells and Mexican Ground Beef — to create a whole delicious and compliant AIP meal (recipe links to these below!)
No avocado
Other salsas that seek to be anti-inflammatory by removing nightshades often use avocado. This recipe excludes avocado because it’s very high in copper, which is also inflammatory.
Ingredients in AIP Verde Salsa are:
- kiwi
- cucumber
- fresh cilantro
- lime juice
- ginger root
- sea salt
How to make AIP Salsa Verde
Soo easy!:
- Place all ingredients into blender.
- Pulse to combine, to create a chunky but soupy texture, about 30 to 40 seconds.

Any Mexican food dishes will taste lovely with this condiment.

- 3 kiwi peeled and roughly chopped
- 1 cucumber peeled and diced
- ¼ cup cilantro fresh & roughly chopped
- ¼ cup lime juice fresh
- 1 Tablespoon ginger root finely grated to measure
- sea salt
Instructions
- Place all ingredients into blender.
