What does white hot chocolate taste like?

White hot chocolate tastes a lot like regular hot chocolate, but it doesn’t have the bitter notes of cocoa. Typically white chocolate is creamier, smoother, a bit sweeter and richer โ€” perfect for those of us who love high fat, rich desserts … but a healthy version!

White hot chocolate is also milky.

Most white hot chocolate recipes use processed white chocolate. This recipe uses pure cocoa butter โ€” much healthier, not overly sweet and made from real food. Real cocoa butter actually tastes better, too, and has a wonderful texture, instead of being wax-like.

Does making homemade white chocolate take a lot longer than mixes, pods and powders? No! Sometimes beautiful real food is not only fun to make, it’s quick and easy.

What kind of dairy-free milk is used to make white hot chocolate?

Coconut milk works great in this recipe.

You can also use heavy cream, if you eat dairy. (I only recommend raw, grass-fed dairy.)

I am also a big fan of certain homemade nut milks. My favorite (low carb) homemade nut milk is macadamia nut milk, and that would also work well in this recipe. Macadamia nut milk has an amazing flavor, is low in carbs and easy to digest.

Right now our dairy-free daughter is home for a long summer visit, so I’m making macadamia nut milk more often … and loving it. I’ll publish my keto low carb version this week, so stay tuned for that.

This beverage doesn’t use a lot of milk, actually. Strawberry White Hot Chocolate is made the way bulletproof drinks are made, to keep this drink low carb โ€” with cocoa butter blended in.

This method creates a super creamy outcome without the carbs. As my husband says, “Delicious!”

Bulletproof blended drinks don’t disappoint. You’ll see that water is used in this recipe, but don’t worry; the end result is stupendously creamy, sweet and perfect.

If you’re Paleo or GAPS and not counting carbs, your favorite milk can be used. You’ll see the few recipe variations below.

Is cocoa butter healthy?

Cocoa butter is high in Vitamin K, a vitamin that helps with detoxification, blood clotting and healthy bones and teeth. Vitamin K also helps D3 from the sun to assimilate into our bodies. Butter is high in Vitamin K, but if your diet is dairy-free, cocoa butter is also a good source. Cocoa butter is also high in Vitamin E.

Here is the healthy fat profile of cocoa butter:

  • Saturated Fats- 57-64%
  • Monounsaturated Fats- 29-43%
  • Polyunsaturated Fats- 0-5%

High in antioxidants, cocoa butter has a long shelf life (2 to 5 years) and unlike chocolate, has almost no caffeine.

Cocoa butter is healthy for most people.

Is there a sub for cocoa butter? (AIP)

Actually, yes. Although this drink would no longer be a white hot chocolate, you can!

For AIP or other diets (like VAD) that can’t have cocoa butter, you can simply sub coconut oil, part MCT oil or butter (if tolerated) for the cocoa butter, and the recipe turns out so yummy!

How many carbs in Strawberry White Hot Chocolate?

Per cup, strawberries contain only 49 calories; they provide 3 grams of fiber and only 12 grams of carbohydrate, resulting in 9 grams of net carbs.

One full, delicious mug of this special berry treat, contains only 6 grams net carbs.

If you need your carbs even lower, you can do that! I give the 4 grams net carbs variation in the recipe below. ๐Ÿ™‚ Reducing the amount of berries (because I know strawberries are a special treat to not overdo on keto) in this hot chocolate still turns out a great recipe.

Ingredients
  • 1 cup water
  • 3/4 cup strawberries fresh or frozen (for fewer carbs, use only 1/2 to 2/3 cup strawberries)
  • 1/2 cup coconut milk or use raw heavy cream or macadamia nut milk if preferred
  • 2 Tablespoons cocoa butter fair trade (Substitute coconut oil for an AIP version that's delicious.)
  • 10 drops vanilla stevia , to taste (use 1 Tablespoon pure maple syrup for Paleo/AIP and raw honey for GAPS + 1 teaspoon vanilla extract)
  • 1 Tablespoon gelatin (optional, but creates a lovely fine foam and protein)
  • pinch sea salt
Instructions
  1. Add all of the ingredients, except optional gelatin, to a small saucepan over medium heat.
  2. Heat, stirring, until cocoa butter is melted and liquid is hot but not boiling.

  3. Pour into blender, sprinkle with optional gelatin, and blend (first on low speed, then increase to medium; use caution when blending hot liquids) until smooth, about 25 seconds.

  4. Pour into 2 mugs and serve.

  2. I just made this and it’s so delicious! I’m bummed that I forgot to add the vanilla. I bet it would’ve been even more delicious. I’ll just have to make it again soon! I used raspberries (just because I didn’t have strawberries) and loved the taste. Thanks for another great recipe!
