Depending on the size of your pan, it will take 2-3 batches to fry all the meat. Alternately, you can use two pans. This recipe starts in the Instant Pot and finishes on the stove top.
Prepare the white beans as described below, (rinsing and soaking for 18-24 hours), before starting the main chili recipe. (For a dairy-free version, see Variations below.)
Select a 9″ by 9″ deep casserole dish, or any similar shape. Alternately, use 8-12 clear glass individual dishes.
This filling can be made a day ahead and kept covered in the fridge until ready to assemble casserole. It will require more spreading, and be less runny, if made ahead and chilled.
The easiest way to peel green plantains is to cut off both ends, cut the plantain in half length-wise, then cut it in half again width-wise. Peel the flesh from the peel by first inserting your thumb in between them.
