Homemade CHOCOLATE CHIPS 6 Ways: chocolate, carob, peanut butter, butterscotch, berry (or fruit), chocolate mint {refined-sugar-free, Paleo/GAPS}

I have toyed with/dreamed for years of making my own chocolate chips, ones I could eat, ones that don’t contain refined sugar. I DO have a recipe for some in my cookbook, actually (pgs. 62 and 119). That recipe is amazing; but I pipe out each chocolate chip into the little kiss shape with a pastry bag…and this is not …

Grain-free “Granola” Bars {Paleo, GAPS}

Megan Cooking With Kids, Treats 21 Comments

Years ago, my hubby and I went trekking in Egypt. We first went to our favorite outdoor market in Jerusalem, hand selecting the best dates, walnuts and other dried fruits and nuts. As we hiked through the Sinai Desert, our food was in our pockets. I couldn’t have been happier: no insects and trail mix all day! Alas, to me, …

Real Food ICE CREAM SANDWICH BARS- {grain-free, sugar-free}

Megan Cooking With Kids, Treats, Whole Food Recipes 14 Comments

I didn’t grow up eating these. But as the weather turned HOT this year I found myself thinking of them… I’m super happy with this recipe. I love the dough, the cookie sandwich dough. It’s got that classic cocoa flavor (pretty dark chocolate) and is really fun to work with. You shape it with your fingers and it’s basically non-stick— easy …

My upcoming cookbook EAT BEAUTIFUL: Grain-free, Sugar-free and Loving It is due out the end of June! {Excited!!} And in that cookbook I share with you my grain-free pizza dough, which is one we use in our gut-healing/Paleo cafes with the pizzas we make. It doesn't use coconut flour or almond flour but utilizes a new grain-free baking technique that I'm chomping at the bit to share. {Excited!!} That being said, for all the grain and gluten-free pizza crust options that exist, our family can't believe how much we love this option! Portobello mushrooms provide the best base for a pizza. We like this option every bit as much as a bread-y take on the classic Italian treat.

Christmas Tree Design #2- Stuffed Squash-Gone-KID-FRIENDLY! AND LEARN HOW TO MAKE A MUSHROOM STAR! (GAPS)

Megan Cooking With Kids, Whole Food Recipes 5 Comments

Of the two butternut squash Christmas tree designs I made, this was my kids’ favorite: Half a piece of hothouse cucumber makes the trunk. Cranberries and olive rings make the balls. Diced red and yellow bell peppers make the garland and pretty contrasting colors. A larger portion of the squash is hollowed out to make room for more filling.  (By …
